This salad is a quick and easy side to any meal. You can choose any greens that suit your palate however, if you are looking for a lower-potassium salad, we recommend this salad just as written. Arugula and kale are lower potassium options and can add a lot of great taste! Just add your favorite salad dressing (we like our lemon garlic vinaigrette dressing with this salad best)

Equipment

  • 1 Knife

Ingredients 

  • 1 cup Arugula
  • 1/2 cup Kale baby
  • 1/2 cup Cucumber
  • 1/2 cup Red bell pepper
  • 1/4 cup Red onion diced small
  • 1 tbsp Sunflower seeds unsalted

Instructions

  • Wash all veggies.
    1 cup Arugula
    1/2 cup Kale
    1/2 cup Cucumber
    1/2 cup Red bell pepper
    1/4 cup Red onion
  • Add arugula to bowl.
    1 cup Arugula
  • Chop kale, cucumber, red bell pepper and red onion
    1/2 cup Kale
    1/2 cup Cucumber
    1/2 cup Red bell pepper
    1/4 cup Red onion
  • Add veggies and pumpkin seeds to bowl.
    1 tbsp Sunflower seeds
  • Add your favorite low sodium dressing and enjoy!

Notes

This simple salad can be altered to meet your taste. Swap out specific veggies based on what you have in your kitchen or your potassium needs. The veggies and greens were chosen because they are low in potassium.
