This roasted red pepper sandwich is one of my favorite quick lunches to make. All of these ingredients are ready to go immediately and the sandwich can be assembled in record time.

Instructions

  • Start by toasting the bread. Once toasted, spread hummus on the bottom piece and assemble the sandwich by adding the lettuce, cucumbers, onions, and dressing. Cut in half and serve.
