    Wondering the best way to leach potassium out of potatoes.

    Cut into uniform pieces, soak 2x water more than potatoes for at least 30 minutes, drain. Then add 5X more water than potatoes and boil for 10 minutes, drain. Lastly, add 5X more water than potatoes and boil again until done. Drain and use. DO NOT ADD ANY SODIUM WHEN COOKING.

    I also substitute 1/2 cauliflower chunks and leached yellow potatoes for mash.
