Turkey Bolognese with Zucchini NoodlesBy Anthony ValentineIn an effort to stick with my low sodium diet while also reducing my carb intake, along came the half zucchini noodle half spaghetti turkey bolognese. Also known as "zoodles", zucchini noodles are extremely versatile and are a great alternative for people trying to follow a low-carb diet. This low sodium turkey bolognese recipe is one of my favorite recipes, and a challenging one at that. Although this recipe is a bit tough to make, it's totally worth the effort for you and whomever you are cooking it for! If you're following a low potassium or low phosphorus diet, I recommend only having one serving of this dish.

Low Sodium Flatbread RecipeBy Anthony ValentineI'm a huge fan of quickly taking a few flatbreads out of the freezer to make some pizza for dinner. The frozen flat breads at the grocery store are great and very convenient, but they are almost always very high in sodium. One flatbread could be as high as 1000mg of sodium! I mean, I could personally eat one entire flatbread pizza...the small ones of course. So I decided to come up with a low sodium flatbread recipe so I could freeze my own flatbreads and make pizzas conveniently without getting slammed with tons of sodium. These low sodium flatbreads are super easy to make, and you can freeze them and use them for months. This recipe makes 8 flatbreads, and when individually wrapped and frozen, will last up to 6 months.

I really like to roast a bunch of garlic before hand and keep it in the fridge for when I want to use it in recipes like this one. It's so simple to put a bunch of garlic cloves into an aluminum foil pouch, pop it in the oven and boom, delicious roasted garlic!

If you're like me and follow a low sodium diet, then you know that a dish like this is normally pretty difficult to pull off. A lot of alfredo recipes use tons of milk or cream, instead we're going to be using a 2:1 ratio of stock to the milk, which will help cut back the sodium, and phosphorus for that matter (for the CKD peeps).

If you're like me and love bagels and other bread items, then you also know that these items are normally very high in sodium. Most pancake mixes can also be high in sodium making this fan favorite breakfast item another hard one for us. Not to fret! These low sodium pancakes are fluffy, delicious and take only about 15 minutes to prepare! The problem with store bought pancake mix is that the preservatives, baking powder, and baking soda contain loads of sodium. By swapping out the leavening agents with sodium free versions, we are able to create a low sodium version of this yummy breakfast item.
